The grapes for this wine come only from selected vines within the Burgundy region, and are sorted by hand to ensure that only top quality fruit is used. Made in the Traditional Method (like Champagne) the second fermentation occurs in-bottle, before being aged for a minimum of 9 months. Unlike Prosecco, where fermentation occurs in-tank, this process allows for the development of a softer, more rounded body, delicate, long-lasting bubbles and toasty, hazelnut flavours. Combined with the fresh citrus notes, this is a fabulous white sparkling wine.
